The perfect cheeseburger: The thing about the cheeseburger is that it's meant to be simple food. Over-complicating the cheeseburger is nearly always a mistake. The Meat: I nearly always choose sirloin as it's not too lean (usually 10% fat) and not too fatty (like chuck) and generally holds its shape well without being too dry. Seasoning: Prior to cooking, I shape my patties (usually on the thin side) and bust out the pepper mill over them. Fresh cracked pepper gives a great flavor to the meat. Also, I sprinkle seasoned salt over the patties and rub it in. Cooking: I usually do mine over a charcoal fire with hickory or mesquite chips for flavoring. I usually wait til the charcoal is white so I don't cook too fast on the outside. Sometimes I will brush the patties with BBQ sauce (sweet baby ray's is the best commercially) and let the sauce thicken on the patty. A few minutes on each side and some cheese of your choice and you're in business. Buns: Don't use stupid buns. I usually go to Fuddruckers and buy their buns because they bake them fresh and they taste great! Any bakery buns are better than the grocery store ones though. Don't make the mistake of thinking that buns aren't important! Bon appetit! Now that we know how to make the perfect burger, what kind of condiments should go on top. Also what do you think about lettuce, tomato, onion, etc. Mushrooms perhaps?
